It's just the human / instrument interface: Most players hear many different sounds in their head, and usually have a collection of instruments to chase after those sounds. Yes, you can get most sounds on one instrument, but then you don't get to take that picture of yourself sitting in the middle of your 'collection' ! Loyalty?
