Folks,

Menu for Xmas dinner ...

Pre Meal/cocktail hour:

Cheese plate of Gruyere, Emmenthaler, Maytag Blue, and Pecorino Romano...
Oil Cured and assorted Olives ...

Appetizers:

Clams Casino
Broiled Shrimp with garlic, olive oil, and bread crumbs ...

Salad:

Shaved Fennel Salad on a bed of Spinach and mesclun, with cucumbers, radishes, sundried tomatoes, parmesano reggiano and a blood orange vinaigrette ...

Main Course: Standing Rib Roast, with "Port-Port" Reduction (Port Wine/portobello mushroom sauce made with demi glaze and finished with a bit of butter)
Roasted Garlic/Bacon/Sour Cream Yukon Gold Mashed Potatoes ..
Roasted Root Vegetables (celery root, parsnips, turnips, carrots, and rutabaga)
Bread/Cherry Tomato Gratin with garlic, thyme, and parmesano reggiano.

Dessert: Creme Brulee with strawberries, blueberries, and blackberries.

And yes, this is actually what I made and we ate ..

Alan - that sounds incredible. It's after 11:00 PM and my mouth is watering - I can practically smell the beef and garlic. Wish I lived in NC - I'd drop by for a leftover sandwich with a nice bottle of Merlot and my Skylark (and maybe a few bottles of holiday Porter, too). =)

Oh well, guess I'll have to settle for a few pretzels and some of that Porter. My Alembic is within arms reach . . . now where's that beer??

Guys,

It was just a little something I threw together .... in celebration of acquiring the Dragon's Wing!

Seriously, I had some soldiers over for dinner - they had no place to go, and the mess hall isn't the cheeriest place to be on Xmas day (though the cooks bust their butts to make nice things, and do a great job). From the comments I think they liked the bord of fare.
